Best Sustainable Restaurants in Prague
Brasserie The Julius
Brasserie The Julius provides a sophisticated dining experience led by Chef Milan Dolejš, whose commitment to Czech and European culinary traditions is complemented by a focus on sustainability. Chef Milan incorporates innovative techniques like fermentation and house-made oils, bringing fresh, high-quality ingredients to every dish. With honey soon to be sourced from the rooftop beehive, guests can look forward to a zero-km crafted flavour in the menu offerings.
The meal began with freshly baked bread and aromatic oils, setting the stage for a refreshing starter of stracciatella topped with cherry tomatoes, roasted peppers, basil pesto, and balsamic caviar. The main course featured a delightful veal saltimbocca paired with Parma ham and creamy truffle polenta. To finish, a zesty lemon sorbet served with House of Julius Meinl Prosecco was hard to refuse.
The Artisan Prague
The Artisan Prague is a standout restaurant focused on sustainability and zero waste in a stylish setting. As part of the Marriott Hotel, The Artisan is led by Chef David Rejhon, who crafts a Czech-inspired menu using playful techniques designed to surprise and delight.
The ingredients for the restaurant are sourced from farmers within a 200km radius underlining the kitchen’s commitment to regenerative agriculture. They truly champion sustainability with on-site beekeeping and the cultivation of herbs and lentils for a farm-to-table dining experience.
The restaurant’s inventive approach to reducing food waste shines through its thoughtfully crafted menu, utilising fermentation and vacuuming techniques. Starters include pea hummus, smoked trout, or traditional Kulajda mushroom soup, followed by main courses like lamb loin, duck breast, or koprovka—dill sauce served with quail eggs and organic potatoes. The vegan twist on Grandma’s classic Czech dessert, Bublanina, with crunchy almonds, was undeniably delicious.
Restaurant Střecha
Restaurant Střecha is a socially responsible eatery focusing on sustainability and inclusivity. Operated as a cooperative, it employs homeless individuals and ex-prisoners, helping them develop hospitality skills while offering fair wages, financial guidance, and housing support. Through this mission, Střecha creates positive change while serving delicious plant-based meals from locally sourced, seasonal ingredients.
Střecha’s menu includes a variety of vegan and vegetarian dishes, making it a popular spot for conscious diners. For a taste of Czech classics, try their schnitzel with potato salad, perfectly paired with a big glass of pilsner. Embrace the local experience and dine like a true Czech!
With warm wooden panelling and floors, it’s a cosy setting with contemporary art on the walls, however, the curious installation titled The Writing on the Wall as you walk in jumps out. It was created in collaboration with the US-based NGO Incarceration Nations Network, which advocates for global prison reform. It features letters, stories, and drawings from prisoners around the world, including those from the Czech Republic.
Kantayna
Kantýna Prague offers a distinctive casual dining experience centred around high-quality, locally sourced ingredients and a nose-to-tail approach. It’s all about ethical meat sourcing with small-scale Czech farmers, minimising waste, and honouring traditional butchery methods.
Housed in a former bank building, you’re given a card listing dishes and beers upon entry. In true canteen style, you queue with a tray to choose your food, which is marked on your card and paid for as you leave. The atmosphere is lively, especially on weekends, so if you arrive later, be prepared to dine at the communal standing tables in the middle.
Keep in mind that vegetarian options are limited, and to reach the restaurant, you’ll need to walk through a butcher shop where customers can purchase items to take home.
